Breakfast Cake (some call it coffee cake)

-Wendy Sampson

1 1/2 C flour
3/4 C sugar
2 1/2 tsp baking powder
3/4 tsp salt
1/4 C shortening
3/4 C milk
1 egg
-Mix above ingredients.
-Pour into well greased 8x8 pan.
-Make topping by mixing together:
1/3 C brown sugar
1/4 C flour
1/2 tsp cinnamon
3 TBSP melted butter
-Once topping is mixed, sprinkle over cake batter.
-Bake at 350* for 25-30 mins.

~Our family's tradition is to have this for breakfast on our birthdays, hence it's name of breakfast cake. This tastes great warm or sometimes we make it the night before and refrigerate it overnight, which makes it extra moist. Then just microwave it right before serving.

Your Mom was the best cook EVER! I miss going to your house for the Labor Day Breakfast (or 4th of July...it was one of those holidays...LOL).

I also remember your parents inviting our family over for dinner while my brother-in-law Scott was living with us. Your Mom had an amazing spread of food (must have been turkey there) and Scott yelled out, "What! No cranberry sauce?!" I wanted to die of embarrassment. We still tease him about that to this day :-)
